Beef with Oyster Sauce

Ingredients
  

1 lb (450g) of beef sirloin, thinly sliced against the grain

2 tablespoons of oyster sauce

1 tablespoon of soy sauce

1 tablespoon of cornstarch

2 tablespoons of vegetable oil

2 cloves of garlic, minced

1 medium onion, sliced

1 bell pepper (red or green), sliced into strips

1 cup of broccoli florets

1 teaspoon of ginger, minced

1 tablespoon of Shaoxing wine (or dry sherry)

1 teaspoon of sugar

Salt and pepper, to taste

Cooked jasmine rice, for serving

Chopped green onions, for garnish

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced beef, oyster sauce, soy sauce, cornstarch, and Shaoxing wine. Mix well to coat the beef evenly. Allow it to marinate for about 15-30 minutes at room temperature.

    Prepare the Vegetables: While the beef is marinating, wash and chop the onion, bell pepper, and broccoli into bite-sized pieces. Set them aside.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Stir-Fry the Beef: Add the marinated beef to the hot skillet in a single layer. Stir-fry for about 2-3 minutes until the beef is browned and nearly cooked through. Remove the beef from the skillet and set it aside on a plate.

          Cook the Aromatics: In the same skillet, add a bit more oil if needed, and toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.

            Add the Vegetables: Add the sliced onion, bell pepper, and broccoli to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
