Ingredients

1 cup pearl barley

4 cups water or low-sodium vegetable broth

1 cup almond milk (or any milk of your choice)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

½ cup chopped nuts (such as walnuts, almonds, or pecans)

Fresh fruits for topping (like sliced bananas, berries, or apples)

Optional: A dollop of yogurt or a splash of cream for serving

Instructions

Rinse the Barley: Start by rinsing the pearl barley under cool water to remove any excess starch and debris. Drain well.

Cook the Barley: In a medium-sized pot, combine the rinsed barley and the water or vegetable broth. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 30-40 minutes, or until the barley is tender and has absorbed most of the liquid.

Add Milk and Flavor: After the barley is cooked, stir in the almond milk, maple syrup, vanilla extract, cinnamon, and salt. Increase the heat slightly and cook for an additional 5-10 minutes, stirring frequently, until the mixture reaches your desired creamy consistency.

Incorporate Nuts: Remove the pot from the heat and stir in the chopped nuts. This will add a delightful crunch and nutty flavor to the porridge.

Serve: Divide the porridge into bowls and top with your choice of fresh fruits. If desired, add a dollop of yogurt or a splash of cream for extra decadence. Drizzle with additional maple syrup if you like it sweeter.

Enjoy: Serve warm and enjoy a nourishing start to your day!
