2 large chicken breasts, diced

1 cup of cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil (for frying)

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumber

1 cup edamame (shelled)

2 green onions, sliced

SESAME SEEDS, for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon honey

1 teaspoon lime juice

Prepare the Chicken: In a bowl, mix the cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Dredge the diced chicken pieces in this mixture until well coated.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken pieces in batches, allowing space for them to fry. Cook until golden brown and crispy, about 5-7 minutes per batch. Drain on a paper towel-lined plate.

      Make the Bang Bang Sauce: In a separate bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and lime juice. Mix until smooth and well combined. Taste and adjust seasoning as desired (add more sriracha for heat or more honey for sweetness).
