1 lb boneless, skinless chicken breast

1 cup of cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

½ cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

2 cups mixed greens (spinach, arugula, etc.)

1 cup cooked jasmine rice or quinoa

1 avocado, sliced

½ cup sliced green onions

Sesame seeds for garnish (optional)

Instructions
 

Prepare Chicken: Start by cutting the chicken breast into bite-sized pieces. Season with salt, pepper, garlic powder, onion powder, and paprika. Mix well to coat the chicken evenly.

    Breading Setup: Set up a breading station. Place the cornstarch in one bowl, the beaten eggs in another, and the panko breadcrumbs in a third bowl.

      Bread the Chicken: Dredge each piece of chicken in cornstarch, shaking off the excess. Dip it in the beaten eggs, and then coat it with panko breadcrumbs. Ensure each piece is fully covered and set aside.
