1 lb boneless, skinless chicken thighs

2 tablespoons cornstarch

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust for heat preference)

2 cups cooked jasmine rice

1 cup shredded carrots

1 cucumber, thinly sliced

¼ cup chopped green onions

¼ cup chopped cilantro

Sesame seeds for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Chicken: In a bowl, mix the cornstarch, garlic powder, onion powder, paprika, salt, and pepper. Coat the chicken thighs evenly with the cornstarch mixture.
