Banana Bread Brownies

2 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup chocolate chips

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    In a large mixing bowl, combine the mashed bananas and applesauce until fully blended.

      Add the granulated sugar and brown sugar to the banana mixture, and stir until combined.

        Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          In a separate bowl, whisk together the all-purpose flour, whole wheat flour, cocoa powder, baking soda, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix; it’s okay if a few flour streaks remain.

              Fold in the chopped walnuts and chocolate chips, reserving some chocolate chips for topping if desired.

                Pour the brownie batter into the prepared baking pan, spreading it evenly. Sprinkle any reserved chocolate chips on top.

                  Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

                    Remove from the oven and let cool in the pan for about 10 minutes before lifting out using the parchment paper overhang. Transfer to a wire rack to cool completely.
