8 oz (225g) pasta of your choice (penne or rigatoni work well)

1 block (8 oz) feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Lemon zest (optional, for serving)

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Dish: In a large baking dish, place the feta cheese in the center. Scatter the halved cherry tomatoes and minced garlic around the feta.

      Season: Drizzle the olive oil over everything. Sprinkle the dried oregano, red pepper flakes, salt, and pepper. Use a spoon to lightly mix the tomatoes and garlic, ensuring they are coated in oil and seasoning.

        Bake: Bake in the preheated oven for 30-35 minutes, or until the feta is golden brown and soft, and the tomatoes are bursting.

          Cook Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

            Combine: Remove the baking dish from the oven. Using a fork, mash the baked feta and tomatoes together to create a creamy sauce. Add the drained pasta to the baking dish, and mix well. If the mixture is too dry, add reserved pasta water a little at a time until desired creaminess is achieved.
