2 cups all-purpose flour

1/2 cup water (plus more as needed)

1 teaspoon salt

1 pound ground pork (or chicken)

1 cup finely chopped napa cabbage

3 green onions, finely chopped

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon minced garlic

1 teaspoon fresh ginger, grated

4 cups chicken broth (or vegetable broth)

1-2 tablespoons chili oil (to taste)

1 tablespoon rice vinegar

Fresh cilantro for garnish

Sliced radishes for garnish

Salt and pepper to taste

Make the Dumpling Dough: In a large mixing bowl, combine the flour and salt. Gradually add water, mixing until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.

    Prepare the Filling: In a separate bowl, mix the ground pork, chopped napa cabbage, green onions, soy sauce, sesame oil, minced garlic, grated ginger, and salt and pepper to taste. Ensure everything is well combined.

      Form the Dumplings: After resting, roll the dough into a long log and cut it into small pieces. Roll each piece into a small circle (about 3 inches in diameter). Place a teaspoon of filling in the center. Fold the dough over to create a half-moon shape and pinch the edges to seal. Alternatively, create pleats along the edge for a traditional look.
