Ingredients
  

1 lb ground chicken

1 cup shiitake mushrooms, finely chopped

2 green onions, sliced

2 cloves garlic, minced

1 tbsp fresh ginger, minced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp chili garlic sauce (adjust to taste)

Salt and pepper to taste

24 square wonton wrappers

Cooking spray or oil for frying

Fresh cilantro for garnish

Sliced red chili for garnish

1 cup shredded red cabbage (for crunch)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large skillet over medium heat, add a splash of oil and sauté minced garlic and ginger until fragrant (about 1 minute).

    Cook the Chicken: Add the ground chicken to the skillet and cook until browned, breaking it up with a spoon (about 5-7 minutes).

      Add Vegetables: Stir in chopped shiitake mushrooms and cook for an additional 3-4 minutes until mushrooms are softened.

        Season the Mixture: Pour in soy sauce, sesame oil, rice vinegar, chili garlic sauce, and season with salt and pepper. Mix everything and cook for another 2 minutes. Remove from heat and let it cool slightly.

          Form the Tacos: Preheat the oven to 375°F (190°C). Take a wonton wrapper, place about 1 tablespoon of the chicken mixture in the center, and fold the wrapper in half to form a triangle. Press the edges together to seal tightly. Repeat with remaining wrappers and filling.

            Bake the Tacos: Brush or spray the wonton tacos lightly with oil and place on a baking sheet. Bake in the preheated oven for 12-15 minutes, or until golden brown and crispy.

              Serve: Remove the tacos from the oven. Serve hot, garnished with fresh cilantro, sliced red chili, and shredded red cabbage. Offer lime wedges on the side for squeezing.
