Ingredients

2 medium yellow squash, sliced into ½-inch rounds

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

Salt and pepper to taste

¼ teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Begin by washing the yellow squash thoroughly. Cut both ends off and slice the squash into ½-inch thick rounds.

In a large mixing bowl, combine the sliced squash with olive oil. Toss to coat evenly.

Add garlic powder, smoked paprika, onion powder, salt, and pepper to the bowl. If you like a bit of heat, sprinkle in the crushed red pepper flakes as well. Toss again until all the squash pieces are well-seasoned.

Preheat your air fryer to 380°F (193°C) for about 3-5 minutes.

Place the seasoned squash rounds in the air fryer basket in a single layer, making sure they are not overcrowded to ensure even cooking. You may need to work in batches.

Air fry the squash for 10-12 minutes, shaking the basket halfway through the cooking time for even crispiness. The squash should be tender and have a nice golden brown color.

Once done, remove the squash from the air fryer and transfer to a serving dish. Garnish with freshly chopped parsley for a pop of color and added flavor.

Serve warm as a side dish or enjoy as a healthy snack!
