8 oz spaghetti or any pasta of choice

2 cups fresh spinach, roughly chopped

1 lemon (zest and juice)

2 cloves garlic, minced

3 tablespoons olive oil

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and reserve about 1/2 cup of the pasta cooking water.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant (be careful not to burn the garlic).

      Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet. Pour in the lemon juice and zest, and toss everything together. If the pasta seems dry, add a bit of the reserved pasta water to achieve your desired consistency.
