200g udon noodles (fresh or dried)

3 tablespoons chili oil

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 garlic clove, minced

1 teaspoon ginger, minced

2 green onions, chopped (whites and greens separated)

1 tablespoon toasted sesame seeds

A handful of fresh cilantro (optional)

Salt and pepper to taste

Cook the Udon Noodles: If using dried udon noodles, bring a pot of water to boil and cook according to package instructions (usually around 8-10 minutes). If using fresh udon, cook for 2-3 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Chili Oil Sauce: In a small bowl, mix the chili oil, soy sauce, sesame oil, rice vinegar, minced garlic, and minced ginger. Stir well to combine and let it sit for a couple of minutes to allow the flavors to meld.

      Sauté the Aromatics: In a pan over medium heat, add a splash of oil and sauté the white parts of the green onions until fragrant (about 1-2 minutes).
