250g udon noodles

2 tablespoons chili oil (adjust to taste)

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon rice vinegar

1/2 teaspoon sugar

2 green onions, finely chopped

1 tablespoon toasted sesame seeds

Optional: 1/2 cup cooked protein (tofu, chicken, or shrimp)

Fresh cilantro for garnish
